Case Study: Contract Caterer – London

We working with In House catering running chefs hands on kitchen training sessions within units. Ian then went on to become Culinary Director for this small contract catering company that specialised in directors dinning and conference and banqueting operations of the highest calibre. His role - to improve all things related to food, and of course to carry on the kitchen training and staff development.


Case Study: Contract Caterer - Education

Appointed to work as Group Executive Chef on a consultative basis, assisting in tendering for new contracts and opening new contracts as they are acquired. Going into various kitchens and holding full day kitchen training and staff development sessions where we worked alongside the staff, introducing new ideas and methods, influencing the daily menus and introducing cooking to order for large numbers.

Also writing a monthly newsletter for all of the companies clients and workforce. Keeping them abreast of what is coming in season while keeping them abreast of modern food trends.
