Soft Boiled Eggs filled with Smoked Salmon

(4 portions)

" It may be decadent, but go on, spoil yourself, this is a great way to start the morning, and they also make a great first course too."

4 medium eggs 50g/2oz smoked salmon
1tbsp double cream salt and freshly ground white pepper


Cut the smoked salmon into thin strips about 2cm/¾ inch long. Boil the eggs for 4 minutes. When cooked very carefully cut off their tops as neatly as possible and scoop them out of the shells into a bowl. Break up the egg using a fork, add the salmon strips and the cream, season lightly, mix well and return to the shells.
